Chicken Piccata with Pasta & Mushrooms from  Eating Well

This recipe is easy.  If you can boil water for pasta and brown chicken in a skillet, you can do this.  It also got enthusiastic thumbs up from the family.

I cut the chicken breasts into strips.  The smaller pieces of chicken cook faster and are easier to serve.  If you don't want to cut the chicken, you can place the chicken breasts between two pieces of plastic wrap to prevent a mess and use a meat mallet to get the chicken breast thin.  This also decreases the cooking time.

Mushrooms are not in this picture because my family won't eat them.  I like mushrooms and thought they went really nicely with this recipe.  I just cooked them in some butter in a separate skillet.  I did leave out the capers in this recipe though.
