Tomato, Corn, and Avocado Salad
This recipe was pinned to my Pinterest recipe board from marthastewart.com. I also pinned similar recipes which can be found here and here.
This is everything you need to make a really delicious and easy salad.
Martha wants you to use fresh corn cut from the cob. As you can see, I am not Martha Stewart, so I just used a can of corn and drained the liquid. I didn't use freshly squeezed lime juice either. I also didn't use any of the oil the recipe called for.
Here's what I did use:
1 can of corn, drained
1 pint of cherry tomatoes, sliced in half
1 bunch of green onions (scallions)
1 avocado, sliced
2 tablespoons lime juice
salt and pepper to taste
Dump it all in a bowl and it's ready! That was easy! It looks colorful and it tastes really good!
I have had a salsa like this before and it is great. I will definitely try this and blog about it. I might put cilantro in mine because I have some I need to use.
