This chicken with mango salsa is my new favorite chicken recipe! It's healthy, easy to make, and absolutely delicious! It was a hit with the whole family. As soon as the weather gets warmer, I start craving lighter meals with fresh ingredients and this recipe certainly fits the bill. I love the combination of the sweet mango and the tart lime juice. I would have added a bit more cilantro too, but I tried to go easy on it since not everyone in my family likes it. If you don't like cilantro, you can easily leave it out of the recipe.
This salsa made enough for four pieces of chicken with a just little bit extra left over. I experimented to see what what else would be good with it and I found out it's really good with corn chips. Next time I'm serving chips and salsa, I'm making this mango salsa! I'm thinking it might be good on pork too.
Add a tropical twist to ordinary chicken with this versatile salsa recipe!
For the chicken
3-4 boneless, skinless chicken breasts (about 1 pound)
1/3 cup flour
two tablespoons olive oil
pepper to taste
Heat one tablespoon of oil in a nonstick skillet.
Dredge the chicken in flour. Place the chicken in the skillet. Cook on medium heat until golden.
Turn the chicken over. Add another tablespoon of oil and cook until golden.
Season with pepper to taste. Reduce heat to low. Cover skillet with a lid to cook chicken all the way through, about 5 to 10 minutes.
2 ripe mangoes
1/2 cup finely chopped red pepper (about 1/2 a pepper)
1/4 cup finely chopped red onion
1 Tablespoon lime juice
1/2 teaspoon sugar
cilantro to taste (optional)
Mix all ingredients in a bowl. Serve over chicken.
