Cinco de Mayo is just a few days away!  It's kind of a big holiday where I live and a lot of people celebrate it with food and cookouts similar to Fourth of July.  If you're looking for a south of the boarder dish to make for Cinco de Mayo, how about making some tomatillo sauce?  Tomatillo sauce is great to put on tacos and enchiladas, but I also like to eat it as a dip with chips while sipping a cold margarita.

What the heck is a tomatillo anyway?  It's a Mexican fruit.  If you can't find them at your grocery store, you might be able to find them at a Mexican market.

Tomatillos have a papery skin.

When you peel away the skin, they look like green tomatoes.

To make this tomatillo sauce, you'll need:
about a pound of tomatillos (8-10)
1 jalapeno pepper
6-8 cloves of garlic
one bunch of cilantro (optional)

Peel the tomatillos and rinse them off because they are slightly sticky.  Dry the tomatillos and place them with the jalapeno, and unpeeled garlic on a broiler pan and broil on low until slightly charred about 10 to 15 minutes.

Peel the garlic and place everything in the blender.  For a less spicy sauce, slice open the jalapeno and remove the seeds before putting in the blender.  Add the cilantro and blend until smooth.  Chill the sauce in the refrigerator before serving.  Get yourself a cold margarita and you're all set!  Happy Cinco de Mayo!

Everything needed to make beautiful cards is included.  In my box, I received cards, envelopes, stamps, ink, wood cut-outs, stickers, and even glue dots!  My Paper Pumpkin is part of Stampin' Up, so all the materials are Stampin' Up products.

I have a collection of Stampin' Up stamps with wooden bases and this was my first time using the clear stamps.  I discovered that I love using the clear stamps because it was so much easier to position the stamp exactly were I wanted it.

Congratulations Card

I like the way I was able to make a card that has a really different design from what I would normally make.  Creating it was a breeze because everything I needed was already in the box.  No searching around the house for materials and supplies.  Cleaning up was easy since any left over materials went right back in the box.  I had enough to make eight cards, so I can still make more cards later.  I love that it only took 15 minutes to make.  I can make a handmade card at the last minute, and still have something nice to give to someone on a special occasion!

Chaco Canyon

During spring break we took a road trip to Chaco Canyon.  Just three hours from my house looks like this:

It was a perfect time to go (read not too hot!)  We took our bikes with us and rode the nine mile loop to see the ruins in the canyon.

Dozens of structures, known as great houses, were built in Chaco Canyon between 800 - 1050 A.D.  They are aligned to solar, lunar, and cardinal directions.  The buildings were not lived in,  but were used only periodically when people came to the canyon for important ceremonies and trading.  This area was connected by roads to more than 150 great houses throughout the region.

Not much is left of the buildings except some walls, but they look very striking against the blue sky of the high desert and the red cliffs of the canyon.

Chaco Canyon was added to the UNESCO World Heritage List in 1987 and it's one of only twenty World Heritage sites in the U.S.  It's also a sacred ancestral place of the Pueblo cultures of Arizona and New Mexico.  It's believed that the culture that made these structures also made the cliff dwellings at Mesa Verde in Colorado.  A few years ago, I got to visit Mesa Verde which was also spectacular.

Isn't it funny I have so many places pinned on my Pinterest boards that I'd like to travel to someday, and I haven't even seen the things that are in my own back yard?  Chaco Canyon was beautiful and I'm glad I finally got to see it!

Have you ever tried an Orange Julius?  I first learned how to make this recipe in my middle school home economics class decades ago and was reminded about it by a pin on Pinterest.  The combination of milk and orange juice might sound like a really weird combination,  but it actually makes a great shake.  This is a really refreshing drink you can easily make at home with just a few ingredients you probably already have in the fridge.  Just mix it up in the blender and enjoy!

6 ice cubes
1/2 cup frozen orange juice, from concentrate
1 cup milk
1 cup water
1/2 teaspoon vanilla
1/4 cup sugar

1.  Crush ice in blender.
2.  Add remaining ingredients.  Blend until smooth.
