Peanut butter pork sounds kind of weird doesn't it? But the peanut flavor along with the spicy jalapeno and hot sauce is a strange combination that really works well together.
Mr. Pin Junkie looked skeptical at first but said it was fantastic after the first bite. Even Pin Junkie Jr. liked it and he usually doesn't like pork. (He says my pork chops are always too dry.) This pork tenderloin was moist and full of Asian inspired flavor.
Besides being delicious, this recipe is also easy to make. Just mix the marinade and let the pork sit in a seal top plastic bag in the fridge until you're ready to cook it. It doesn't take very long to cook. (The recipe says to grill it but I cooked it in the broiler.) Serve the pork with a salad made of bean sprouts, cilantro, and radishes. That sounds like another weird combination, but it works!
I'll leave the jalapeno out next time, or maybe just use half of one. Having a little bit of heat was good, but it was pretty spicy and overpowered the other flavors. Other than that, the only thing wrong with this recipe was that it didn't make enough! I'll definitely be making this again and will certainly double the recipe!
